A Hero 12 is a great choice. Get some extra batteries for it, a mount to put it on (maybe fix it to the center console). A media mod with a dead-cat windscreen would do wonders for audio.
During summer with no wind it can absolutely overheat. Total nightmare for professionals. One way to get around this is to get a white enclosure with heat fins or simply the shade the thing.
At least a 128GB SD card is recommended. I run 512GB in mine, and those run all day and don’t fill up, though on some trips I’ve come close.
You can use the GoPro app to pull the video off the camera and edit clips for your personal enjoyment.
Making fun fishing videos/clips is easy and simple with consumer-level tech. And keep it simple, don’t fall down the rabbit hole of direct attached storage, 5k, proxies, Apple Silicon, frame rates, composition, etc. or you probably won’t have time/money to fish.
And don’t forget to have fun! You’ll enjoy the video you shoot and edit for years to come.
