I’m guessing you saw them tailing? Did you actually see the redfish at all?
I bring this up because in the past gar have fooled me. Gar will tail, too.

Probably not. The can jump when being chased, but a shrimp jump is so distinct from anything else that I am certain that if you thought you saw shrimp, then you saw shrimp.
Both these bait types can certainly co-locate.
